If you are a mom like me you would know what a blessing mashed potatoes are in a home of picky eaters. A lot of times, I found myself in the rabbit hole of recipes looking and arranging new dinner ideas with mashed potatoes.

Many People love to combine meatballs with mashed potatoes and the internet is full of many meatballs and mashed potatoes ideas but the reason I like Dukkah mashed potatoes that it perfectly balance the softness and rich flavor of the meatballs
Dinner Menu item no 1: Red Pepper Jelly Meatballs
The special Red Pepper Jelly Meatballs only took 30 minutes to make and very budjet friendly as one serving only cost you 0.75$

Ingredients
3⁄4 lb (375 g) lean ground beef
Herbed Garlic Sea Salt Blend (Grinder), to taste
1⁄2 cup diced onion
1⁄3 cup regular or gluten-free breadcrumbs
1⁄4 cup Parmesan cheese
2 tbsp herb & Garlic Dip Mix
1 egg
2 tbsp vegetable oil
1⁄4 cup Red Pepper Jelly
Preparation
Combine the first 7 ingredients thoroughly. Roll meatballs tightly.
Heat oil in a frypan over medium-high heat. Add meatballs and cook, for about 15 minutes, turning frequently until nicely browned. Remove meatballs and set them aside.
Remove excess oil from the pan. Add Red Pepper Jelly and melt. Return meatballs to pan, and toss quickly to coat. Serve immediately.

Ingredients
1 lb (450 g) potatoes, peeled and quartered
2⁄3 cup skim milk

2 tbsp olive oil
1⁄2 cup Dukkah, prepared
Preparation
In a Multipurpose Pot, boil potatoes until tender. Drain and return to pot. Cover, and set aside.
In a saucepan or in a Prep Bowl, mix milk with Herb & Garlic Dip Mix. Heat or microwave on medium for 2 minutes.
In a large bowl, mash or whip potatoes until lump-free. Add milk mixture and olive oil, and stir until smooth. Sprinkle with prepared Dukkah, and serve.

A dinner plan for a lazy day.
We don't have the same amount of energy every day. Some days we are feeling so tired that we don't want to cook or we aren't in a mood to cook. But still want to eat something healthy and don't want to ruin our diet with microwavable pizza. The dinner idea with mashed potatoes is for that day.
It will only take you a few minutes to throw everything in a slow cooker and then you can forget about it for five to six hours. You can even make a big batch of it to eat it again with pasta tomorrow.
Dinner Menu item no 1: Slow-cooked Saucy Pot Roast

Ingredients
4 cups sliced mushrooms
4 carrots, thickly sliced
3 garlic cloves, minced
2 celery stalks, chopped
2 cans (5.5 oz/ 156 ml) tomato paste
1 can (28 oz/ 798 ml) plum tomatoes, drained
2 tbsp Sun-Kissed Tomato Dip Mix, or Spinach Dip Mix
1 tbsp Seasoning for Meatballs & Meatloaf
2 - 3 tsp sugar
4 lb (1.8 kg) beef pot roast (cross-rib or blade)
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
Preparation
Place mushrooms, carrots, garlic, celery, and tomato paste into a slow cooker. Add tomatoes and, using your hands, gently break them up. Stir in seasonings and sugar.
Season beef with Sea Salt and Pepper, and place in the slow cooker. Spoon liquid overtop.
Cover and cook about 6 hours on high or 10 hours on low, until beef is fork-tender.
Thickly slice beef and serve, using about 1⁄3 of the sauce.
Dinner Menu item no 2: Garlic Mashed Potatoes
A healthy and delicious alternative to traditional mashed potatoes made with cream. This mashed potato dish is so simple to make with the ingredients more likely already in your home.

Ingredients
4 medium potatoes, peeled and quartered
2⁄3 cup milk
1 tbsp Herb & Garlic Dip Mix
2 tbsp olive oil
Sea Salt (Grinder), to taste
Preparation
Boil potatoes Approximately 20 minutes, or until tender. Drain in a removable colander, and return to pot. Cover, and set aside.
Heat milk with Herb & Garlic Dip Mix in Multipurpose Pot - 8 C.
Mash or whip potatoes until lump-free. Add milk mixture and remaining ingredients, stirring until smooth.
